Raos Eggplant

Sundanese dish. And raos itself means delicious in Sundanese.

Ingredients

2 whole Eggplant, sliced into 2 cm thick
5 whole Shallot, sliced thinly
3 whole Garlic, sliced thinly
5 whole Red chili pepper, sliced,
1 stalk Scallion, sliced
2 tbsp Sweet soy sauce
1 tbsp Fish sauce
0.5 tbsp Oyster sauce
1 tsp Sugar
2 cup Cooking oil
1 cup Seasoned flour
1.25 cup Water

Instructions

1To make the batter, combine seasoned flour and water, mix well. The batter consistency should be a bit thick. Add water if necessary.
2Heat oil in a fry pan over medium heat. Add the eggplants to the batter and coat the well the fry until golden brown. Remove and drain the excess oil.
3Remove the oil from the fry pan but reserve from about 3 tbsp. Add shallot, garlic and chili. Saute until fragrant.
4Add the fried eggplants and mix well. Season with sweet soy sauce, fish sauce, oyster sauce and sugar. Mix to coat. Add scallion and fry for about 15 seconds.
5Remove from the pan and serve with steamed rice.
