Cilok is one of West Java snack, especially in Bandung. Made from tapioca starch with delicious peanut dipping sauce. Cilok also is abbreviation from 'aci dicolok' or literally translate as 'pricked tapioca dough'.


Quantity for 4 servings
200 g All purpose flour
200 g Tapioca starch
1.5 tsp Salt
2 clove Garlic, grinded
0.25 tsp Ground white pepper
600 ml Water
2 whole Scallion, thinly sliced
1 tsp Sugar
2 tsp White vinegar
150 g Peeled peanut, toasted
3 whole Long red chili


1In a large bowl, mix tapioca starch with 1 tsp salt and pepper.
2Meanwhile, boil 400 ml water in a pot together with grinded garlic. Once it boils, pour the water into tapioca bowl and mix well.
3Add the flour to the tapioca mixture and knead the dough until smooth and elastic.
4Meanwhile, boil enough water in a pot. Shape the dough into small balls then boil the dough until it floats. Remove and drain.
5To make the peanut sauce, grind peanut, sugar, 1/2 tsp salt and chilli into fine paste. You can use blender or food processor.
6Add water and white vinegar to peanut paste and mix well. Taste and adjust to your liking.
7Serve the tapioca balls (cilok) with the peanut sauce.
