Pumpkin Muffin

Ingredients

450 g Pumpkin
1.5 cup All purpose flour
1.5 tsp Baking powder
1.5 tsp Baking soda
1.5 tsp Cinnamon powder
0.5 tsp Salt
1 tsp Vanila essence
1 cup Sugar
3 Egg
0.5 cup Vegetable oil

Instructions

1Preheat oven over 200 degree C.
2Meanwhile add in the pumpkin into your food processor or blender then process until it becomes puree.
3In a large bowl, sieve the flour then add baking powder, baking soda, cinnamon powder and salt. Mix well until combine and set aside.
4Meanwhile in another bowl, whisk egg and sugar for about 5 minutes until combine. Whisk in vanilla essence and oil until combine.
5Pour the egg mixture into the flour mixture and stir until combine. Do not overmix the batter.
6Prepare the muffin paper cup the fill in about three quarter of the batter.
7Bake for 20 minutes or until the toothpick comes clean when you prick the muffin.
8Remove from the pan, let cool and serve.
