Salmon with Cilantro Pesto

I usually cook salmon with teriyaki sauce but I never imagine that homemade pesto with bok coy would so perfectly match with salmon and I should add healthy too!



Quantity for 4 servings
4 Salmon fillet
1 pinch Salt
2 pinch Ground white pepper
0.5 cup Roasted almond
0.75 cup Cilantro, roughly chopped
1.5 cup Bok choy, roughly chopped
0.5 Lime, zested (1 tsp) and squeeze the juice
1 clove Garlic
1 tsp Ginger, minced
1.5 tsp Rice vinegar
1 tbsp Less sodium soy sauce , add 1-2 tsp more
2 tbsp Olive oil
0.5 Scallion, sliced
